This egg omelet will become a staple in your keto diet.
Here is the recipe and I've also included tips below for when you are cooking it.
Ingredients:

1 - organic egg
- 1 - organic valley egg white
- 1/2 - chopped bell pepper
- 1/4 - chopped GREEN onion
- 2 Tbsp - Organic Valley Butter
- small hand full of chopped mushrooms
- 3 - Applegate Peppered Turkey Sausage Links
- 1/2 tsp - black pepper
- 1/2 tsp - salt
Note: this omelet takes about 10 minutes to make.
Here's photos of my ingredients except the veggies, all of these can be found at Whole Foods, Trader Joes, Fresh Thyme or similar type stores. Some of them can be found at Aldi, Walmart or Target (so i'm told, but I don't shop at Target).
Prep
Preheat your griddle/skillet to 350 degrees
Cooking tip:
If you don't have an electric griddle at your house, you have no idea what you are missing, I bought the one pictured here from Amazon for camping, and when I'm not camping, it's in my kitchen, I use it every single day. The great thing about it is that you can pre-heat it to specific temperatures, plus clean up is extremely easy (I'll include a tip at the end of this article on clean up).

Step 1
On the left side of your griddle, add the peppered turkey sausage links. Pour a couple ounce of water just above the links so that it runs between them and quickly cover them with a pan lid. If you don't have a griddle, you can start to cook these in a small skillet.
Start step 2 while the turkey sausage links are cooking. Cook for about 3 to 5 minutes and rotate them.
Tip: The water helps keep them very moist and fresh (you will notice a difference if you don't add the water and cover). I use a clear pan lid so that I can see them and I know when to turn them over.
Step 2
Chop or dice all of the vegetables. Add the butter to the right side of the skillet and spread it as it melts. Once the butter is melted, add the chopped veggies. Flatten the veggies until they are all laying on the skillet cooking.
Step 3
Take the turkey sausage links off the griddle and cut them into 1/4 inch circles. Flip all of the veggies and add the turkey sausage links to the mix.
Step 4
Put eggs and egg whites into a small bowl and scramble/mix them. Move your veggies and turkey sausage on the griddle so that they are close to each other. At this time, if some veggies are on top of the others, that's ok.
Note: have your spatula ready. Pour the eggs over the veggies and turkey sausage. Using the spatula, make sure that all of the eggs stay on top of the veggies. This can take a couple minutes.
Tip: I only pour half the eggs on and contain them on the veggies, then once contained I add more of the eggs and continue this until all of the eggs are on the veggies.
Step 5
Add salt and pepper to 1/2 of the omelet. Using your spatula, fold the half of the omelet that does not have salt and pepper on it so that it is on top of the other half.
Step 6
Let the omelet cook for about 1 minute and lightly press the top with the spatula. If any egg spills out of when you press, push it toward the omelet. Cook for another 45 seconds to a minute, then flip the entire omelet.
Cook the omelet for 1 to 2 minutes, then remove and add to plate.

Tips for cleaning griddle (as promised above):
NOTE: the griddle is extremely hot, take caution not to burn yourself!
- While griddle is at 350+ degrees, pour water over all areas that were used.
- Using your spatula, push all of the water towards the drain. You'll notice that almost all of the grease and fat come off with the water.
- After most of the water is off, use a small hand towel and go back and forth on the skillet lightly to remove all other grease and fat.
- Drain and clean drip pan from griddle
